Ali's Simple Kitchari Recipe

Kitchari is a nourishing mung-dal & rice porridge-like dish from India which is eaten during a cleansing period or when someone is sick. In Ayurveda, it is considered a perfect & complete food due to it's ability to nourish and heal the gut and the body.

This is the kitchari recipe is what I used for my husband and I during our recent 3 Day Kitchari Cleanse. It is really easy to make and quite delicious!

Serves: 2
Ingredients:
  • 2 Cups - Split Yellow Mung Beans (soaked overnight or at least for a few hours)
  • 1 Cup - Cooked Rice (Basmati rice is the main choice, but you can use other types of rice available to you. I used long grain rice because I didn't have access to Basmati)
  • (Optional) 1/2 Cup, loosely chopped - Broccoli 
  • (Optional) 1/2 Cup, finely diced - Carrot 
  • 2.5 Cups - Water
  • 2 tbsp - Olive oil
  • 2 tsps (to taste) - Pink Salt or Sea Salt
  • Dash - Cumin powder
  • 1/4 tsp - Asafoetida (Hing) powder
  • Dash - Ginger powder or grated fresh ginger
  • Dash - Turmeric powder
  • (Optional) Dash - Black Pepper
Topping & Condiment:
  • White Sesame Seeds
  • Roasted Sesame Powder
  • Kimchi (optional)
 
Directions:
  1. Use a medium to large pot and place olive oil into the pot and heat on medium with cumin, turmeric, ginger, and asafoetida for a couple of minutes to brown. Add mung beans and salt. Cover and cook for about 20-30 minutes on low heat until beans are soft.
  2. Add rice into the pot and stir to mix well. Cook for another 5 minutes.
  3. Scoop into bowls and sprinkle on white sesame seeds and black sesame powder gently over the top.
  4. Serve and eat as is or with a side of kimchi.
  5. Enjoy!
